Sexy Tofu, The Stand, & Health In A Hurry + A Smoothie Recipe!
Connecticut as a whole has definitely left an impression on me. Whether it was the unique cuisine in Hartford, the super friendly restaurant owners and servers, or the amazing eats, it was all pretty great. And honestly, I didn’t really have any expectations for CT so, it was nice!
But the fun wasn’t over! Just when I thought CT was winding down I met up with the super kind and sassy Zoë Eisenberg of SexyTofu.com. Zoë had actually interviewed me a while back regarding the vegan wedding site that I founded last year, for her guest column on IEatGrass.com. We stayed in touch via my road trip and when I arrived in the Fairfield area of CT she let me crash on her couch a couple of nights (you can read about it on her blog, here).
This is us! Here we are hangin’ out at Las Vetas Lounge in Fairfield. Pretty cool place! I made this cafe my ‘office’ for a few days.
This is Zoë’s kitty, Zucchini. He is an absolute riot! So happy and playful! What a sweetie pie.
The morning of my departure from CT Zoë was kind enough to make us smoothies. Yumm-o! She even gave me the recipe so I could share it with you:
I love playing around with different smoothie combinations. Regardless of my fruit choice, my blender creations almost always have greens and peanut butter. Here is a nutty smoothie with a splash of green just in time for St. Patty’s day!
1 cup frozen strawberries
1/2 cup frozen blueberries
½ cup frozen raspberries
1 frozen ripe banana
1 non-frozen ripe banana
1 heaping handful of baby spinach
½ cup non-dairy milk ( I like soy or almond)
½ cup coconut water
2 tbsp chunky organic peanut butterPlace all of the above in your blender and blend until smooth. You may have to pulse a few times to get the greens and frozen fruit through. Enjoy!

This place is pretty cool. It’s very open and smartly located next to a large fitness center. The Stand (with another location in Norwalk) focuses on organic, vegan juices, smoothies, soups, salads, sandwiches, baked goods, detox cleansing programs.
I figured I’d try the ‘house special’ juice naturally called, The Stand – kale, cucumber, celery, and apple. It was very good!
This is The Stand’s Raw Gazpacho – halved cherry tomatoes, sprouts, red peppers, celery, and a little kick. I really like this a lot!! The juice and gazpacho was super filling and took me through past lunch. Deeelish!

This place is super cute! It’s tucked in the corner of a little “shopping center” like area of buildings, all squished together. This place was actually off my radar initially but thankfully Zoë mentioned it! Also, the famed young vegan cookbook author, Hannah Kaminksy is a cook at this place. She wasn’t there when I stopped by but I did have a nice conversation with someone who I believed to be the owner.
I also didn’t get many great pics, but the one below came out okay. This is Health In A Hurry’s Raw Vegan Sushi – rolled with an almond pate and filled with fresh veggies, sprouts, and avocado.
This was REALLY, REALLY, reeeeeeaaaaally delicious!!!!! Probably the best raw vegan sushi I’ve ever had. So good!

Aw man, I’m so bummed I missed you! I guess you’ll just have to stop back in soon so we can meet up. This post makes me so happy though- Hooray for hometown pride! Fairfield has come a really long way in terms of vegan friendliness, just in the past 5 years or so.
